3 Recipes we LOVED this Week!
If you follow along with me on Instagram and watch my Insta-stories you know I love to cook. I'm passionate about healthy cooking and I love coming up with new recipes for our family every week. There are so many ways to prepare real, clean, whole-food! It's fun to explore and try different dishes with different flavors. My kids love being in the kitchen cooking with me as well. Even though it's always, always, always a giant mess, I love that they get to learn about new foods, try different flavors, and eat healthy food. So this week we had a lot of new dishes and snacks we made! I always get asked where do I find my recipes. I will honestly say a lot of the things I make are things I make up on my own or I find through other bloggers on Instagram. Pinterest is great too! And sometimes I may see something and it gives me inspiration but completely change or make up a similar recipe! (Mostly because I don't want to go to the store to get those exact ingredients at the time, haha). I also love cookbooks and could spend a lot of time in that section at Barnes and Nobles!

Okay, how fun are these? So I'm one of those peeps who love fall and I love Halloween just as much. I really do. It's just so much fun and the kids get so excited. We have been having daily walks that we call Halloween walks to go look at all the fun decorations in our neighborhood. My kids love it. So these pancakes were inspired by our Halloween fun we have been having! They are SUPER easy and my kids LOVED them. I surprised them with these and I've never seen them so excited to actually sit down and eat. (Thank god). They also are packed with flaxseed and spinach. Two things that when they took bite after bite, I thought to myself, "winning".
1 Cup Oatmeal
2 cups of Spinach
1/2 cup of water
Dark Chocolate Chips
Candy Eyes (or any other creative eyeball!)
First I started by mixing some Flax with water and letting it sit for a few minutes. This actually is a great egg replacer! For every 1tbs of Flax, you mix 2.5 tbs of water. I then put all of the other ingredients into the blender. I lastly put the Flax-egg in! I added the rest of the water and blended! So easy. Then use 1/4 cup of batter and pour into a skillet on medium heat. I cooked one side longer than the other, when the side that is not cooking so long flips, that's when I put the eyes and chocolate chips for the mouth in! I cooked the first side the longest for about 4 minutes. Flipped cooked the other side for about 2 minutes then put the toppings on! So easy guys, I promise. I topped these with some organic maple syrup but you could also top with berries, honey, peanut butter or almond butter! Yum.

This was surprisingly SO good! And I say surprisingly because I thought it was going to be good, but wasn't sure about SOOOO good! haha. It was delicious and my hubby wanted second and thirds. This was also so easy. I actually made a batch of the sweat and spicy chickpeas on Sunday, then just threw them in the bake on Tuesday. I like to prep a few things on Sunday that I could throw into salads or add to something I'm cooking throughout the week! This was also easy!
First I made the Roasted Chickpeas ahead of time. You do not have to do this, but it's a time saver throughout the week!
Roasted Sweet and Spicy Chickpeas
1 can of chickpeas (make sure to drain and rinse well)
1tbs of olive oil
2tsp of coconut sugar
1 tsp paprika
1tsp of cayenne pepper
1/2 tsp sea salt
First, place the drained chickpeas and put them into a bowl. Next mix the chickpeas with the olive oil. After they are well-coated mix all other ingredients. Mix well. Place onto a baking sheet and bake at 375 degrees for 45 minutes. Make sure to check about every 15-20 and stir!
Sweet and Spicy Chickpea Bake
1 cup carrots roughly chopped
1 cup of the Sweet and Spicy Chickpeas
1/2 of an Onion
1tbs Olive Oil
1 tsp Coriander Seed
Pinch of Sea Salt
2 Cups of Arugula Salad
1/2 of Avocado
First, preheat oven to 400. Place Carrots, Chickpeas, Onion, Olive Oil, Seasonings into a baking sheet and lay flat! Bake for 25 minutes. Next, take your Arugula and place into a bowl. Add your baked veggies! Top with Avocado and squeeze of lemon. This is SOO good!
Note: This makes enough for a few servings!
Our #3 Favorite of the week!
Okay, these are just yum, yum, yum! Both of my kiddos love these and make great snacks for ALL of us! I love having something like this around because they are easy to take with me places or freeze them and pull them out when needed! I have been seeing lots of pumpkin balls or pumpkin bites on Instagram and Pinterest. It gave me inspiration for these. I feel like I make some sort of "energy ball" almost every week. So this momma knows what she likes in her balls! (Wait, that sounds weird.)
Pumpkin Coconut Energy Bites
3 cups of oats
1 cup of Pumpkin
1 tsp Cinnamon
1/2 cup of Coconut Shreds
5Tbs of Organic Natural Honey/Maple Syrup/Agave
1Tbs of Flax seeds
1 cup of Dark Chocolate Chips
1Tbs of Chia Seeds
Mix all ingredients together in a bowl. If you feel like you need to add a tiny bit more honey or a little water (tiny), go ahead and do so. Then take about 2Tbs of dough and roll into balls. Place them on a baking sheet and store them in the fridge for about 20-30 minutes. Then dig in!!! YUM! I also always store mine in the fridge!
