Stay in this Valentine's Day with this Easy and delicious dinner!

Valentine's Day, you either love it or hate it. I feel like there's no in between! I happen to love it. You can roll your eyes now if you are one of the ones who hate it. Haha. (That would be my hubby, party pooper). I just think it's so cute. Why not have a day dedicated to flowers and candy. Two things that make me happy. Plus now having kids, it's fun to see how excited my daughter get's to pick out her Valentine's cards for class and help with their cute pre-school parties.

Anyways, I like to make the occasion extra special for everyone in my family. My kids get excited to help and the only way to my husband's heart is through his stomach. Seriously, the man likes to eat. I came up with the best and yummiest dinner you can cook for your loved one! If you're like us, with two toddlers it's just easier to stay in. Plus it's special when you cook for someone. Even if your a self-proclaimed non- chef, I promise the attempt makes it special.

So this meal is plant-based, but If your thinking, "My guy will not eat a meal that does not include meat", I promise he won't even notice with this. There is so much flavor and packed with protein, your loved one will want seconds and thirds. Maybe fourths like mine. haha! He absolutely loved this meal.

Black Bean and Quinoa Enchiladas 

These are so simple and delicious! Perfect for a weeknight dinner or special occasion. 

Avocado Sauce

1/2 onion chopped

4 cloves of garlic chopped

1 avocado

1 cup of water

1/2 bunch of cilantro (fresh)

1 tbs cumin

salt to taste (roughly 2 tsp)

1/2 tsp olive oil

Make this Avocado sauce first and set aside in a bowl. It's super easy and so delicious. It adds a lot of flavor to the enchiladas. First heat up the olive oil in a pan on the stove. Add onion, garlic, cumin, and salt. Cook for about 5 minutes. Add the rest of the ingredients into a blender. Add the onion mixture to the blender as well and blend. Set this sauce aside! 

Enchiladas

2 Cups of cooked quinoa

1 can or fresh black beans

1 tsp olive oil

1/2 onion (diced)

1 bell pepper (diced)

1 tbs cumin

2 tsp salt (salt to taste)

3 cups of Enchilada sauce (I recommend buying two cans, or making your own. The store has some great options though to make it easy!)

6-8 tortillas (You can buy GF, Wheat, Corn, Blue Tortillas, Spinach, any tortillas that you like!)

Pre-heat oven to 375. Heat olive oil in a pan. Add onion, bell pepper, cumin, and salt. Cook for roughly 5-7 minutes on medium-high heat. Add black beans and quinoa. Add 1/2 cup of Enchilada sauce to the mixture along with 1/2 cup of the Avocado sauce.  Cook for another 5 minutes. Warm tortillas shell's in the microwave for around 30 seconds. Grab a baking dish and cover the bottom with Enchilada sauce. (I would say about 1-1 and 1/2cup). Fill tortillas shells with the bean and quinoa mixture. Roll up and lay the seam side down in the sauce. Add another 1/2-1 cup of Enchilada sauce to the top. (Not as much on top). Cook for 20 minutes. Let cool for 5. Add the rest of the Avocado sauce to the top along with any toppings you enjoy! I cut up more fresh cilantro, Avocados, and jalapenos. (My hubby loves spicy). Add on top and serve! YUM! Another note: Fresh salsa is also delicious to throw on top. My hubby likes spicy taco sauce as well. 

Balsamic Strawberries and Coconut Ice Cream

Can we say, YUMMY! This dessert is absolutely delicious also dairy free! The secret ingredient makes the entire dish!

Balsamic Strawberries and Coconut Ice Cream

8 cups of Strawberries, Sliced Thick

5 tbs Balsamic Vinegar  (TRUST ME, this is delicious!)

2 tbs of sugar (I used coconut)

1/4 teaspoon of pepper

Coconut Ice cream (I used this brand, any brand is fine. This is just dairy free and the coconut flavor is delicious)

Lemon Zest

30 minutes before serving mix strawberries, balsamic vinegar, sugar, pepper in a bowl together. Let sit at room temperature for 30 minutes. When ready to serve to add strawberries and top with a bit of lemon zest. It's delicious!
